Crock Pot meals on vacation

My family and I are heading down to Disney in Feb. We have a condo so most of our meals will be eaten there. I was thinking of taking my crock pot with me (we are driving and have the room) so that when we get back dinner would be hot and ready to eat. Does anybody have a few good crock pot meals to share?

We always take our crock pot when we stay in condos :). One of my girls favorite is crockpot lasagna.

Barilla Lasagna noodles (don't need cooked)
Jarred Sauce of your choice
Mozarella Cheese--shredded
Ground meat (if you wan to take the time to do this--we do :))

Layer it in crock and cook for a couple of hours. It's great and easy!
 
Chicken in crock, cover with salsa, cook on low. This will only take 6 hours MAX so not an all day thing but you could always do it the day before and then reheat.


super yummy and great over rice or shredded up in quesadillas or tacos.
 
Roast in the crock pot, cover in bbq sauce. When you get back, pull the meat apart with a couple of forks, easy BBQ sandwiches, not too many ingredients.

Maybe make up a couple of recipes, freeze them, then put the frozen stew/whatever in the crockpot on low. It should thaw and simmer while you are gone. I'd do a test run at home, but that might save you from taking a lot of ingredients/shopping a lot.
