I've been reading about this Candlelight Processional deal and it sounds like something we'd like to do. I do have a few questions that maybe someone can help me with.

My 180 mark is coming up, do I just book the ADR at the restaurant I want included with the dining package? I know you can't book the CP package until August, but I wasn't sure if the dining ressie was made ahead of time.

I'm trying to figure out what a good meal time would be...

I'd like to attend the 5:00 show, from what I understand, this means I'll be booking a lunch ADR. Does this mean I can have lunch at 11:00 and come back at 5:00 for the show?
If we have to eat closer to the 5:00 showtime, what is the latest ADR that I can comfortably get to make the 5:00 show? We're hoping to book Teppanyaki.

They cannot convert a regular ADR to a package ADR so there really isn't a point in booking now unless no matter what you want to eat there and are afraid you will miss out due to the CP packages selling out.

They set aside so many tables for the package guests for when the package does go on sale.

When you do call for the package, they will give you a certain range of times to choose from that will give you enough time to get to the show afterwards.

FWIW, you would need to be done eating by 4:00p to get to the show in a comfortable amount of time. A restaurant like Le Cellier can take 1 1/2 to 2 hours.
