What time does counter services like Pecos Bills, Cosmic Rays, Rosie's, and other theme park counter service food places open? Is it 10:30, 10:45 or 11:00?

My guess is around 10:45 or 11:00. We tend to eat an early lunch and have found these places pretty dead around that time. Just a guess-wouldn't be surprised if it was closer to 10:30.
