Do they all accept plastic? I do not like carrying much cash especially on vacation and will have my debit card with me.

All the ones I have come across. I never carry cash in the parks anymore (or anywhere, for that matter!). Just use my Visa.

Every location we have been to you had the choice of paying by cash or credit card.

Just about every location at WDW other than some of the carts will accept: Cash, Traveler's Cheques, Disney Dollars, American Express, Discover, JCB, MasterCard, Visa, Debit cards with the logos of any of the aforementioned, Disney Gift Cards and Disney Resort IDs which have charging priveleges.
