Counter Service for diabetics

Our family is spending 5 days in Disney, visiting each park at least once. One of our family members is diabetic. We are on the DDP. I have already made our ADRs for the sit down meals but I am not very familiar with the counter service options. Where are some of the best places in each park to eat so that we can accomdate the diabetic diet but still enjoy some of Disney's best food options?
 
As diabetics I can offer these as suggestions.
Cosmic Rays in MK offers a Turkey wrap that is very good. It is huge so be prepared for that.

The taco salad at Pecos Bills isn't to hard on glucose levels either. Especially if you take it easy on the cheese.

At epcot Sunshine Seasons offers a wide variety of different salads, a pork chop dish and Asian foods, that is a great place to eat.

As for AK and DHS, we don't usually eat CS at DHS and at AK we eat at Restaurantasaurus and have our "burgers" of the trip, so we be a little bad there.
Be wary of the BBQ places, sometimes there is heavy sugar in the sauce.

Check out the menus online for some more options, it definitely isn't hard to find something good.
