Pre-covid we have done both the Seven Colors tubing and the Chacchoben Ruins. Both were fine except for that very long drive on the straight road out to the main north-south road. Takes around 45 minutes with only one bend in the road. Takes an extra 45 minutes to get to the Seven Colors area down south. There are several excursions down there, but for the tubing one we were driven to a parking lot, given tubes and life vests and then towed in a line over to the "river" entrance. Very slow float on very clear water. Then out into lake and towed to a small dining area for lunch. We could swim with the tubes and also off the pier at the dining area.
Chacchoben is a well-reconstructed set of ruins and is quite extensive. Hot. Lots of iguanas around. Mostly flat unless you climb one of the pyramids - steps are high and steep for adults, let alone a 4 year old, but kids would probably think it was great. Unfortunate you can't go independent - we only had 6 people and our guide (who did guide work when not doing archaeology). Even in a small group we could have easily spent twice as long at the site and not seen it all. Ice cream novelties are available in the gift shop. Our group mostly went for beer.
The Disney excursions are all "bubble" so you will get off the ship, be escorted down the very long dock to the bus and back to the ship before any non-vaxed can do any shopping.
