A lot of whether you see animals from your savanna view balcony depends on when you look. During our stay last week I learned that the best animal viewing from our particular balcony on Kudu trail overlooking Arusha savanna was late afternoon when the giraffes were in our area of the savanna. The Sable antelope, Zebra, etc. would show up late morning and also late afternoon. Other trips I've seen various animals at other times. The best advice is to keep checking so that you learn the animals habits for your particular view. The reward is lazing on your balcony watching giraffe, Zebra, etc..

In the rare event that you are assigned a standard room after booking savannah, you can let them know that you are interested in switching to a savannah view room if one opens up during your stay (assuming you are interested in doing this, of course). It's not ideal to switch rooms mid-stay, but I'd do it if it meant I could have the room category I booked. As others have pointed out, though, it's extremely rare for them to downgrade your room. It only happens in extenuating circumstances; it's certainly not the norm at Disney.
