Kroger was having a fabulous deal on cornish hens when I went grocery shopping on Sunday-- I got a package of two for $3.50!!

I usually just baste them with butter and roast for an hour, but was wondering if anyone has any better ideas or recipes?

How do you cook these?
 
I got the same deal! We had them on Sunday night--I hadn't made them in ages because they've been pretty expensive.

I just roast mine and baste with butter and herbs (garlic, oregano, thyme, sage--pretty much whatever I have). They were delish.

My favorite prep for cornish hens is to rub their skins with cumin, salt, and pepper, marinate them in a little oil, then grill them and serve with a mango salsa. I can be more specific if that sounds appealing to you--some people don't like cumin.
 
This is a silly question, I know, but what do they taste like? Is it like chicken or something different? I've always wanted to try them, but unsure of what exactly I would be trying! :confused3
 

I usually roast them with 1/2 an onion inside and a little salt and pepper, maybe a bit of sage if I'm feeling it...under the skin. Then about 1/2 hour before they are done, I brush them with honey that been thinned down a bit with some hot water.

They taste very much like chicken, but not exactly.
 
I like to separate the skin from the body a little. Then I stuff pesto under the skin and put a little more pesto in the cavity. Salt, pepper and butter the skin and roast.

They taste alot like chicken, but they are so cute. :stir: Enjoy you game hens no matter what you do to them. I made a flaming cherry sauce for them.
 
CGHs can be yummy. I put a little oil in the bottom of a pan and dust the hen with unbleached flour. It goes in the oven at 350 for about 30 minutes.
While it's roasting, I make a glaze of sour cream, dijon mustard, and apricot preserves. You can make the glaze to taste but I prefer it on the sweet side.
Then I glaze the hen and put it back in the oven until it's done--usually about another 30-40 minutes. As a final twist, I toast some slice almonds and sprinkle a few over the hen during the final 5 minutes or so in the oven.

We either split them in half and BBQ them on the grill or bake them whole in the oven. But the sauce is almost always the same. Orange Marmalade with soy sauce, a little honey and a dash of OJ or lemon juice. It is sweet/sour/salty and very, very yummy :) But don't sauce until the last 20 minutes, the sugar will brown and almost turn black if put on too soon.

We affectionately call them "little chickens", they taste like chicken but "richer", like more dense and flavorful if you will. We love them.
 
Well, I think I will pick a couple up at the store this evening and make them tomorrow. Looks like there are many, many ways to fix them!
