Corn Fritters
2 c corn
2 eggs
¼ c flour
1 tsp salt
1/8 tsp pepper
1 tsp baking powder
2 Tbl cream
4 Tbl fat
Beat eggs & add flour, baking powder, salt & pepper. Chop & add the corn. (I dont do it too much & leave some whole. The original recipe called for grating fresh corn.) Add the cream. (I use 2% milk & its fine.) Melt the fat (or just use oil) in a frying pan & drop corn mixture by spoonfuls into the hot fat. Brown on both sides. Makes 16 18 fritters.
I haven't made these for a while. I used to freeze my own corn that I'd cut off the cob each summer & used that. I never bothered to chop it then. If you use canned corn, I'd probably chop it some as it tends to be harder/firmer than defrosted frozen corn. Do NOT use creamed corn.
