Corn Fritter Recipe

Hi :p I posted this on the CB but I am looking for a relatively easy corn fritter recipe. I have been searching all through my cookbooks but can't find one....can anyone help?
 
Corn Fritters
2 c corn
2 eggs
¼ c flour
1 tsp salt
1/8 tsp pepper
1 tsp baking powder
2 Tbl cream
4 Tbl fat

Beat eggs & add flour, baking powder, salt & pepper. Chop & add the corn. (I don’t do it too much & leave some whole. The original recipe called for grating fresh corn.) Add the cream. (I use 2% milk & it’s fine.) Melt the fat (or just use oil) in a frying pan & drop corn mixture by spoonfuls into the hot fat. Brown on both sides. Makes 16 – 18 fritters.

I haven't made these for a while. I used to freeze my own corn that I'd cut off the cob each summer & used that. I never bothered to chop it then. If you use canned corn, I'd probably chop it some as it tends to be harder/firmer than defrosted frozen corn. Do NOT use creamed corn.

I also have recipes for apple, peach & cherry fritters if anyone is interested.
 
and loved to pan fry them and dob it in catsup.......yummyyyyyyy
 

Ketchup? That's a new one on me. We either ate them plain (my mother was always worried about our weight) or, when we were up at my grandmother's, we ate them with powdered sugar or maple syrup! Yum! :teeth:
