I am cooking one in the crock pot right now too!!
This is my recipe:
2 1/2 to 3 lb. Corned beef brisket with spice packet, cut in half
1 Head of cabbage, cut into wedges
1 Onion
4 White potatoes, quartered
1 lb. Baby carrots
3 ½ Cups Water
3 Garlic cloves, minced
1 Bay leaf
2 Tbsp. Sugar
2 Tbsp. Cider vinegar
½ tsp. Pepper
Place the meat in the bottom of a 6-qt. slow cooker. Put the onion, potatoes and carrots on top. Combine the water, garlic, bayleaf, suar, vinegar, pepper and contents of spice packet; pour over the vegetables. Top with the cabbage, cover and cook on low for 8-10 hours or until meat and vegetables are tender. Remove bay leaf before serving.
