Do the pictures have to be sent via e-mail (jpgs) - can they be normal 'paper' pictures sent through the post office ?

We we married 23 years ago - no digital available. Our kids are teens, no digital when they were born.

How could we do pictures for the menu with "paper" photo's ?

Yes, they need to be digital jpgs. What I did was scanned my parent's wedding pictures and emailed them to her.

If you don't have a scanner and don't know anyone who is willing to do this for you, there's always the option of taking the pictures to a photo place (like Wal-Mart), scanning the pictures and having them put to CD for you to take home and email. Just remember, most photo places (like WM) won't work with copyrighted photos.

My DH has the scanner (for business) and knows how to use it, not me.
