Cool meals for a hot day

What are your favorite things to make at the Fort after spending a hot, summer day at the parks? (I'll be in a cabin so I'll have the full kitchen.)

I plan on making beans, franks and cornbread one night. I also plan on making quickie desserts such as jello pie or banana puddin'. Salads are always good, too. What are you going to make?
 
Kungaloosh?? Nothing better than a nice cool slushie kungaloosh after a hard day at the parks.

Seriously, get take out chicken from T.E. the day before, and then have a picnic the next night with salads, jello pie, and yummy yummy cold chicken from T.E. MMMMMMM
 
I see you are going to make cornbread (yummy!) but I don't think the cabins have cast iron skillets so you may need to bring your own.

I don't cook much at the Fort but at home, a good cool meal I like to prepare on a hot, humid, summer day is boiled, peel-n-eat shrimp chilled over ice. A side of coleslaw, rice, and sliced red ripe tomatoes to finish it off. Dessert would be a chilled rum fruit bowl (make it non-alcoholic with rum flavoring). I make it for our pool parties but we have two, one for the adults (with real rum) and one for the kids (flavoring).
 
Yum! I really like the idea of the chilled rum fruit bowl!!

You have almost exactly my name before I changed it when I got married.:thumbsup2 First name is the same spelling, but Lyn was spelled Lynne. I dropped the Lynne & now use my maiden name as my middle name, as it sounds better w/ the last name of Thimm (pronounced TIM). I already had a hick sounding name, but it was worse with the married name... Besides, now my initials spell JET!!:lmao:

And now back to your regularly scheduled thread.....

Glad to meetcha!! I've run into other Jody Lyns with all various spellings. Not too many of us with the Y in Jody. :thumbsup2

I can second that and we got the "grab and go" that was way more for that day, but made an excellent lunch for the next day or two for the two of us. The fries are questionable, but the biscuits are great the next day. Just add asalad like cole slaw or even beans and onions and you're good to go.

..Mr Goofy here,,,my vote for something cool at the end of a hot park day is to head over to the "Beaches& Cream" at the Beach Club Resort and get a KITCHEN SINK ! :thumbsup2 (MHOOBY):thumbsup2
