Cooking question...help fast please!!

I am making a soup for dinner that calls for a cup of heavy cream. I just got back from the store...forgot the cream.

It's just for my family, and I normally wouldn't have used heavy cream anyway...i would have bought fat free half and half.


I have some low fat plain Coffee Mate liquid....do you think I can sub that, and maybe supplement with some milk?

I would just use milk, probably not skim milk though.

Is this for a cream soup? You need need the fat for the creaminess of the soup.

Do not use coffe mate fat free. If you have skim milk, it is not going to sit well either. It will be like "water" instead of creamy.

It's for Zuppa Toscana...the sausage and potato soup from Olive Garden. It is broth based, with some cream. Not a thick soup at all. I might have to experiment and hope they eat it. I do not want to go back to the store. It was a ZOO this morning!

Do you have a can of evaporated milk? I might mix it with the skim milk.

Then go with the skim milk. The consistency will be watery, but it will probably be fine.

I'd use what I had on hand, in this case skim, and maybe add a tablespoon of butter to give it that "rich" taste if it's needed.

Id probably do 1/2 cup skim milk and 1/2 cup evaporated milk. Let us know how it tastes! I mightmake that for christmas eve!

Evaporated milk, definitely. I regularly substitute it for cream when cooking if I don't have any cream.
