Cooking for Two - What do you do?

Hi All,

I am planning for our September trips and The Joy of Cooking thread on the Mousellaneous board got me to thinking. I prefer to cook in our villa, but I am at a loss for dinners for DH and I. Breakfast and lunches are easy. We usually order pizza one night and then have leftovers on another night, but I am having difficulty planning for the other nights. Since it is just the two of us, making something like spaghetti or lasagna is way too much food. For those of you who cook and have only two people in your family, what do you do for meals?
 
My DH and I usually get a Publix meal with a rotisserie chicken, two sides and rolls. It always makes dinner for two nights for us. One night we usually have a snack night. I buy flavored tuna and have crackers, fancy cheeses, summer sausage and fruit. I always bring the 100 calorie microwave popcorn packages too.
 
If it was me, I would still make things like spaghetti/tacos/etc. We'd either eat the leftovers on another evening or we'd toss them. Even if we ended up tossing the leftovers it would still be a cheaper meal than eating out.

We also like to get the fried chicken pieces at Publix along with some cole slaw or potato salad. If there are any leftovers we eat them cold for lunch one day.

You can make spagetti or lasanga for two people, sounds like you have trouble when it comes to two people, I have a bunch of great recipes that will feed only 1 or 2 people. Chicken Marsala, quick prep with easy cooking time. Eggplant parmesan, I have a weight watchers recipe where you don't fry it no mess and easy. Lots of things. PM me if you want recipes that are easy to make and will feed only 2 people have lots.
 
I've recently discovered Perdue's Portions (something like that). They are great for two people. Boneless breasts marinaded with different seasonings....they have about three or four different kinds. I think there are five breast portions in the pkg.....all individually wrapped. Can do all kinds of meals with these..........slice them thin and grill ......serve over salad or pasta or bake them or pan fry them.......make a side dish and veggie and you're done. They cook up very quickly also. I know they have them in the Orlando area because I just ordered them from Garden Grocer in mid May..........I think they were about $10 for the pkg. .......we got two meals from the pkg. ......I pan grilled all of them........one day we had grilled chicken salad and another day we had them over pasta with a cream sauce (a recipe from years ago at Portabello Yacht Club) both very quick meals.
 
We often stay in studios and I like the Bertolli microwaveable dinners, as well as some of the Birdseye Steamfresh offerings. You just can't buy too much 'cause the studio freezer is limiting.

I also have a George Foreman grill in our Owner's Locker, so we can do chicken breasts, burgers, or steaks, too.

That's a great idea, the George Foreman grill!
 
Thanks to everyone who took the time to reply. I knew that this was the place to come for information! :thumbsup2 These are all really great ideas and sound very doable even in a studio. I also like the George Foreman grill idea, now I just need to make sure that there is room in my OL for it. :)
