cooking at camp

Ok were a family of 5/6 (depending on the day). So what are your favorite, easy recipies for camp cooking? we tend to do campfire cooking and oh yea, were tent people.
 
My favorite meal for camping is chicken fajitas.

Before you leave home, put frozen boneless skinless chicken tenderloins in a zip lock bag and put the marinade in the bag. The chicken will marinate as it thaws. Then slice onions and peppers (green, red, etc) in put in a separate zip lock bag.

take tortillas, shredded cheese, lettuce, sour cream and salsa.

At dinner time at the campground, put the chicken and marinade in a cast iron skillet and cook over hot coals. Add the peppers and onions about 10 minutes before the chicken is done. If you have electricity where you are camping, an electric skillet works really good for this. When the chicken is done, everyone can make up their own fajitas with the other ingredients.

The leftover chicken, onions/pepper, cheese and lettuce can be used the next day for a fajita salad for lunch.

The leftover tortillas can be used with lunch meat for roll ups instead of sandwiches at lunch. We also bring tortilla chips to eat with the leftover salsa.
 
We are big campers during the summer. We usually camp for 5 - 10 days at a time. I always put the marinade in with the meat and freeze it - we do chicken, steak, pork, etc. like this. I also make hamburger patties along with the seasoning and freeze them with wax paper between the patties. In the morning we pull out the meat we will be cooking that night. We grill most everything for supper, except for simple sides like cottage cheese. I don't do salads while camping just because I don't want to pack salad dressing and all of the other "stuff" we like on our salads. The sides we usually have are vegtables wrapped in foil packets with a little butter that are thrown on the grill to cook. At least once a camping trip we have hobo dinners, which is a hamburger patty with sliced potatoe, carrots, and onion wrapped in a foil packet. We do a lot of baked potatoes because they are so easy.
 

Steak and baked potatoes is my wish. I put the potatoe in the fire and let them bake till skin is black. Remove potatoe and grill a good steak of choice. Kids always liked hot dogs on a stick. We have cooked rabbit on the grill but not at FW.
 
I love making meals in my slow cooker but we have a camper so it makes it easy to set it and go. If your going to be around the site a day it may work for you. We also use pudgie pie makers. Hot ham and cheese or even pizza pockets can be made in them. It is a quick meal and the kids will love them!!
 
Grilled meat and veggies, taters, salad, wraps. All good and easy.
I also like to pre-make some fave things like chili and freeze in bags. They'll thaw slowly when packed together and with other cold item then its just heat and enjoy!
