For my husband and I (in our early 50s) this is now a must-do for us. Vet procedures take place earlier in the day, mostly before 11. You can ask at Guest Relations once you enter the park what is going on. There is a vet procedures just about every day as all the animals from all over Disney parks get maintenance at least.
We had just missed a hedgehog three hour surgery but have seen a turtle (not from the Disney "parks") getting his crushed shell checked out and have seen a flamingo getting his/her teeth cleaned.
Any animal on Disney property, NOT just IN the parks, get brought to Animal Kingdom when they are injured. After the animal is cleared (like the turtle), they are released back out of the park. If the animal cannot survive in the wild, they are kept on a Disney preserve.
Also at Rafiki's Planet Watch are lots of exhibits on different animals and what they need to survive or just to live. The petting area is fun and if you've never petted a hairy pigs, well, there's something (as an adult I have to wait for those silly kids to get their fun
