Confused! Help please re: kids credits.

My husband, son (6) and I are planning a trip to WDW (we are DLR vets). We love the idea of the Deluxe dining plan as we're foodies, and would love to try some of the signature restaurants. Typically we have a few "date nights" during our trip when my husband and I go out as a couple to a nice (more adult) dinner while our little guy goes to the kids' club for the evening. I'm wondering how this would work with the dining plan? We would end up using our adult credits but would have leftover kids credits as he'll eat dinner at the kids' club. How would we use these up? Would they just go to waste or is there a way around this?
 
Technically there are no adult or kid credits on the deluxe dining plan. All credits are the same. Kids, however, are supposed to order from the kids menu, but restaurants may or may not enforce that. But that would be only when the kid is ordering, if they do.
 
I found the restaurants not owned by WDW to be stricter. It seemed that whenever we ate at WDW places the server actually encouraged us to order off the adult menu....it will make their tip higher. At T-Rex we were denied. As above, you won't have X number of adult and X number of children credits. It will just be you have X credits. Hopefully that helps.
