Confused about Vancouver bag transfers

We'll probably either stay at the Pan Pacific or the Fairmont Waterfront the night before our Alaska cruise.

In that regard, I'm a bit confused about how bag transfers (i.e., transfering checked luggage from the hotel to the ship) work at these hotels and if there's any difference between the two.

For example, when we've done cruises from Port Canaveral, we've always stayed at a WDW resort the night before the cruise and used Disney transportation to get to the cruise terminal. In that scenario, we've simply put the DCL tags on our bags and bell services picked them up inside our room around 8 am. The next time we saw them, they were right outside our stateroom on the ship.

Does it work the same way at both of these hotels or do they only take the bags from the hotel to a secure area inside the cruise terminal (and not all the way inside the ship)?

Along those lines, I understand Disney has some kind of arrangement with the Fairmont Waterfront where they'll transfer you from the airport to the hotel and also transfer your bags from the hotel to the ship. But can you just have them transfer your bags from this hotel to the ship at a lower price than having them do the entire airport transfer? (seems like taking a cab or Canada Line train would be much cheaper) And do you have to book the hotel through Disney to be eligible for this service?
 
The Pan Pacific is not a Disney hotel. Disney does not book you there. However, if you stay at the Pan Pacific, the bell service there will transfer your luggage to DCL for you at no charge. Just tipping. The hotel is just above the terminal so they do it all the time for all lines.
 
We've stayed at Pan Pacific twice and one bag transfers both times. When you check in, just let them know you'll want baggage transfer. They give you a little card w/ the number to call and you can call it anytime (night before or even the morning of). You need to be in the room when they come get the bags (and this is the time to tip- the service is technically free though). They check to make sure everything's tagged and remind you to make sure your passports and other critical docs are not in the bags, and then take them away. The next time you see them is onboard outside your door! The port is really only just downstairs in the same building, but we like being able to walk around and look at the ship before our PAT and not be lugging around the bags, too. I've heard you can do the same thing w/ the Fairmont, but haven't actually tried it.
 
We stayed at Fairmont waterfront and they also provide the bag transfer service. They told us about it when we checked in and basically early the morning you embark, you place your DCL tags on the luggage and the bellman takes your bags to cruise terminal across the street. We tipped him a couple of dollars per bag and they appeared in our stateroom later that day. Very easy. We took aero car from airport since we are a larger family and taxis hold 5 max.
