Confused about bar pkg

My planner is out of the office til the end of the week, so I was hoping someone might be able to help.
We chose the billed-on-consumption bar pkg, on the documents we recieved explaining the whole day it says that we will be billed for actual consumptions on the day of our event, but on our actual BEO they have the total amount down for the bar pkg.
Do we pay for it all ahead of time and if we go over we pay the difference on the day of? or Do we just ignore it when we are making our final payment and wait for them to send us a bill after the wedding?
Maybe I'm just having a blonde moment but I am really confused

For the bill on consumption they estimate how many drink your guests will drink. If the actual amount is over they will bill you for the extra (or take it out of your deposit) and if it is under they will send you a refund.

i'm doing the boc as well. since we have to pay the estimate, we are lowering our # per person, thinking that we have the $1500 dep to cover an overages.
