complicated ticket question

Here is my question:

We are going to Disney in Oct. on the magic your way package. We are only buying 2 day hoppers because we are going to 2 MNSSHPs. One day I am going on a Keys to the kingdom tour. I will have to buy admission for this day for me only. The question is will they let me add a 3rd day to my hopper only or would I have to buy a one day one park pass?

Yes, when you check in or any time before your existing tickets expire, you can upgrade any or all of them to suit your needs (within the restrictions of the tickets, of course - for example, you can 'only' upgrade to ten days)
