Complicated FP+/onsite stay issue

We are doing a big family trip to WDW over Thanksgiving. I have 14 people booked at the Poly from Tuesday through Monday, all with package tickets with park hopper. However, now my brother and his wife may not be arriving until the day after Thanksgiving. He won't know until November due to the nature of his job.

If I make FP+ reservations for all of us at 60 days out for the entire 7 day stay, and modify his room reservation in November to change his check-in date from Tuesday to Friday, will I lose his FP+ reservations for Friday, Saturday and Sunday? [N.B. this is NOT a "throwaway room" situation. We are all staying the week and he is the only one with a potential change in plans.]

The other option I was considering was changing is park ticket from a "package" ticket to a regular ticket (not sure how to do this) as I understand if I link his ticket in MDE then I can make the FP+ reservations and a change in room status should be unaffected. Although I'm not sure on this either.

I looked in the FP+ and ticket forums but can't find a clear answer. Thanks for any advice.

You shouldn't have an issue losing the fast passes for those days as long as you keep the tix - it's tied to the tix, not the room/package.
