Coffee or ice cream after ride mix-in?

Next winter, we are doing a combination mile stone birthday/milestone anniversary party at Epcot, and hoping to do a ride mixin afterwards. Is it possible to do a pay on consumption ice cream bar something afterwards, or a coffee station as were leaving, for people to bring back to the hotel? Has anyone ever done something like that?

The ride mix-in has to be done as the park is closing, so they usually end the event with the fireworks and then take you on the mix-in, and then you're done. You could ask them about starting the party after the ride mix-in, but then you wouldn't have the viewing area for the fireworks before the park closed. The rides are all so far from the viewing locations that I'm not sure they'd let you leave and return to a party by paying to extend the food service time. Maybe if you were at GM Lounge (no fireworks viewing) and doing Test Track, or Vikings Landing and doing Frozen.
