Coffee cake recipe?

I need a simple, but really good, coffee cake recipe, and I kinda need it soon...tomorrow. I have a staff meeting on Thursday and would like to bring something to share with my fellow teachers. There are 18 of us. (they eat small pieces!) It can be coffee cake, or some sort of yummy casserole, or Monkey Bread...something good that doesn't take a lot of special ingredients or time.

I used this one for our Teacher Appreciation coffee bar on Monday. Everyone said it was delicious but I didn't get a piece!:sad1:

I made it exactly as written, except I made it in a bundt pan. I put half the topping in the middle and half on top....well on bottom when you took it out of the pan.

I topped it with a drizzle made from powdered sugar, milk, and vanilla.
 
This one disappears fast! If you can't get mini-chips, I would just chop regular chips into smaller pieces.

Toll House Crumbcake
Estimated Times:
Preparation - 20 min | Cooking - 25 min | Cooling Time - 10 min cooling | Yields - 12

This sour cream crumbcake is topped with a mixture of brown sugar, butter, nuts and mini chocolate chips. A special treat for morning, noon or night.

Ingredients:
• 1/3 cup packed brown sugar
• 1 tablespoon all-purpose flour
• 2 tablespoons butter or margarine, softened
• 1/2 cup chopped nuts
• 2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Mini Morsels, divided
• 1 3/4 cups all-purpose flour
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 1/4 teaspoon salt
• 3/4 cup granulated sugar
• 1/2 cup (1 stick) butter or margarine, softened
• 1 teaspoon vanilla extract
• 3 large eggs
• 1 cup sour cream
Directions:
PREHEAT oven to 350° F. Grease 13 x 9-inch baking pan.

FOR TOPPING:
COMBINE brown sugar, flour and butter in small bowl with pastry blender or two knives until mixture is crumbly. Stir in nuts and 1/2 cup morsels.

FOR CAKE:
COMBINE flour, baking powder, baking soda and salt in small bowl. Beat granulated sugar, butter and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually add flour mixture alternately with sour cream. Fold in remaining morsels. Spread into prepared baking pan; sprinkle with topping.

BAKE 25 to 35 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack.

CINNAMON ROLLS!!! These will get you WOWs, and only require frozen dough. I make them the night before, refrigerate and bake the morning of. Ice, cover with tin foil, and wrap with towels -- I did this for my 1 1/2 hour commute, and they stayed warm.


Cinnamon Rolls

1 1-lb. loaf frozen bread dough, thawed
1/2 c. brown sugar, packed
1½ T. ground cinnamon
4 T. butter or margarine
2 T cream cheese, softened
2 T butter, softened
3/4 c. confectioners' sugar
1/4 t. vanilla extract
1/8 t. salt

I usually thaw the dough in the fridge early in the morning – it’s thawed when I make the rolls sometime after dinner.

Mix cinnamon and brown sugar in a bowl. Set aside. Roll dough into about a 10 X 14 inch rectangle. Spread dough with 4 T. butter and sprinkle evenly with sugar/cinnamon mixture.

Roll up dough and cut into 8 rolls. Place rolls in a lightly greased 9x13 inch baking pan. Cover and let rise until nearly doubled, about 30 minutes (or you can cover with plastic wrap and refrigerate overnight – remove from fridge in the morning and then allow to rise).

Preheat oven to 400 degrees. Bake rolls in preheated oven until golden brown, about 15 minutes. While rolls are baking, beat together cream cheese, 2 T butter, confectioners' sugar, vanilla extract and salt. Spread frosting on warm rolls before serving.
