Cocoa Beach - which day to go

We are going to WDW in May and want to spend a day at Cocoa Beach. Originally, I thought about Wednesday, right in the middle of our trip to break up the touring of the parks every day. My DW suggested maybe we should go on a weekend as the parks are more crowded then. My thinking is the beach will be jam packed on the weekend. Any suggestions either way would be appreciated.

When we went in May, we went to parks on Tuesday, Wed, Thurs and Friday. I thought Friday seemed much more crowded at MK than the other day that we went (Tuesday). So, I would probably go to the beach on Friday to potentially avoid parks that are a little bit more crowded but also avoid the Saturday/Sunday crowds at the beach. Seems like a good compromise between going Wednesday vs. Saturday.
 
I haven't read a guide book in years, but I thought conventional wisdom was that people traveled to and from WDW on the weekends, making Sunday the lightest day, particularly in the MK. Maybe I'm out of the loop and things have changed. We always plan our park days mostly around the special events we want to see.

we are in disney 1 week from now...friday to friday

we are going to the beach wednesday so our last full night on thursday can be spent at MK

Take care to check the weather forecast for the beach, as you may want to switch days based on that. May is usually great, but just something to consider. The beaches here in Florida usually aren't jam packed even on the weekends unless there is some big event going on at the beach you are visiting.
 
I would go on Thurs. and plan to eat dinner at FishLips. Its right on the port and you can watch each of the cruise ships set sail. It nice to out to the Jetty and walk and look at all the fish and turtles in the water.

The 3rd weekend in May could be crowded as the yearly boat races are held then.
