I think you should tell her at Christmas, that the best present anyone could give! Also looking forward to it and planning it is part of the fun and if you tell her only a couple of days before it takes that away. Plus there may be things she might need to arrange or buy for herself and you need to give her time to do that. I would feel very stressed and panicked if I was told I was going away in only 2 days!

Don't tell her until you are the airport, you can then do the packing, so you only have one suitcase for the two of you with the practicle things in it, you know, the 28 pairs of underwaer for you, the three changes of shorts for you, the 14 polo shirts for you and the stockings, suspenders, mini skirt and tiny bikini for the wife

Seriously though, why not make a Christmas present of the trip, a card with pictures of Florida on it, etc...
