Christmas Side dish ideas Please.

I have the ham. I have a hot potato and a cold potato side, desserts out the wazoo, so I need something green, semi healthy and easy. I don't really want just a salad. Anyone?

How about grilled asparagus? (can also be roasted)

A little bit of olive or sesame oil, salt and pepper.

We make a yummy holiday green bean dish. It's really easy to make.

Saute minced garlic and slivered almonds in butter for a couple minutes. Add fresh green beans and dried cranberries. Saute for a couple more minutes. Hit it with a bit of salt and pepper and you are done.

I'm doing a cold broccoli wreath with ranch for dipping. I'll use cherry tomatoes, mushrooms, etc. to decorate it and make a red pepper bow.

I just learned our favorite Ocean Spray cranberry sauce with orange (in a plastic tub - not can) has been discontinued.

My brother's GF is bringing the "green". She is making a green bean dish. I think she called it "green bean bundles"?

She said that you take fresh green beans sprinkled some garlic powder and brown sugar on them and then tie serving sizes up with the bacon.
Anyway it is something to that effect.

A salad that isn't just a salad:

One head romaine lettuce, chopped
1 large can mandarin oranges
3-4 stalks of celery chopped
1 bunch small green onions chopped
1/2 bag (small bag by the baking stuff) of SLICED almonds
1/2 cup or so of sugar

dressing:
1/4 cup sugar
1/4 cup white vinegar
1/4 cup vegetable oil
1 tsp salt
1 tsp pepper

Mix the salad stuff except the sugar and almonds

caramelize the almonds-put sugar and almonds in NON-STICK pan over medium heat--stir continually until sugar melts and browns almonds--add more sugar as needed. I usually use the full bag and double the sugar but you don't have to. Add to salad (it will clump up so do this immediately and separate into small chunks).

Mix the dressing and refrigerate. Pour dressing on salad about 15 minutes before serving.

This salad looks really nice in a clear glass bowl if you have one too
