Christmas Cookies - Have you made any yet?

too early to make cookies for Christmas and gift giving by the time the actually holiday is here, and with the lack of preservatives they would take funky by then I start 7 days prior to xmas and then they are kept in the cold garage and sorted by type I never mix cookies on trays to the last minute, or they all start to taste the same this year I hav 17 different cookies I will be making most dbl batches, and made very small I hate big jumbo cookies, I like little cookies, this way people feel like that can taste more than one or two cookie making is an art in our house
 
I won't start until the 15th at the earliest. I need to get through finals first and my free time will be used wrapping presents. I actually don't have to have them done until the weekend of the 18th because they are mostly for gifts.

I will be doing:
Jam Thumbprints
Russian Tea Cakes
Chocolate Covered Pretzel Sticks
1 or 2 other items

Sugar Cookies
Ginger Cream Cookies (a soft gingerbread cookie)
Raisin Drop Cookies

I still need to make :

Chocolate Covered Cherry Cookies
Peanut Butter Kiss Cookies (with the Hershey Kiss on the top)
not a cookie, but Popcorn Cake

We are having a Bazzar to raise money for the travel club at school, so I am baking for that. I will have everything baked, and do the frosting on the cookies the day before the bazaar.
 
Next weekend is the only weekend I have with my girls before Christmas (the other weekends they are with their Dad), so I plan on making some soft sugar cookies (at least). I only have one workshift that weekend. I have been craving them, but since the girls have been gone a lot these past weekends I have put in extra hours at my second (part-time) job at Khols. The extra money is really coming in handy! Reading all of these cookies sure is making me want to cook more. :goodvibes:goodvibes
 

Today I made gingersnaps and macaroons. I make one type of cookie per day (two if I'm feeling up to it) until Christmas Eve.

When I was in high school my friend's mom made the strangest "cookie" but they were so good. I'd like to try to make them this year, but I don't have the recipe. Hopefully someone here will know the name of them...

All I know is they're made with those canned chow mein noodles and chocolate. Not sure if it's melted chocolate chips or some kind of mixture. They may have also had peanuts in them.
 
I don't have time to start until the Christmas Dance recital is over on the 11th. Had to get all the decorating done before the relatives get here to see DD8 dance :) Not even sure what all I am going to do this year, but it won't be 53 varieties like I did the psycho cookie marathon year. EVERYONE got cookies for Christmas that year!

I tried to make my first batch yesterday. Quote the word tried. :sad2:

It was a layered bar cookie.

The first layer is baked at 350.

The second layer is baked at 250.

I sorta didn't notice that "2". I mean really, How often do you bake anything on 250?? :confused3

Completely ruined and gunked up the oven so that it will have to be cleaned before I can have a do-over. Lovely. :rolleyes:

They are sometimes called haystacks, it is choc chips, butterscotch chips, chow mein noodles and peanuts. (at least this is the recipe I use)
 
I made a "test" batch of gingerbread men the other day with my best friends daughter. She is 3 and the kitchen was a mess but it was great fun. I sent most of them home with her.
