Christmas at WDW with college age children

Making our first trek to WDW during Christmas season. Probably around the Thanksgiving break. My 21 year old DS asks me what there is for him to do at the World if he doesn't want to spend all his time riding rides. Need suggestions for college age activities at the world. Doesn't drink so the bar scene is not his thing.

My collage age DS loves WDW. We recently went without him for the first time and he was very sad. He likes the parks and tends to hang with us and DS7 quite a bit. He really likes time in the WS at Epcot and innovations. He enjoys signature dining and some times in DTD. If its warm enough he may want some pool or water park time and maybe Disney Quest would be fun. He might like to sleep in a morning or two and join your family a bit later.

He can rent boats and some hotels, bowling, movies, swimming, bike ride, water parks, race car experience and many more things he may enjoy.
