Just had to share:
chop: English cucumber, jicama, cherry tomatoes, orange or red bell pepper.
Add a small amount of minced sweet onion (or a lot if you really like onions)
Par-boil some fresh green beans, plunge them in cold water and chop. Add a can of corn or take the corn off of two cooked ears.
I added a can of black beans - mix everything together and threw on a little balsamic vinegar and a dash of red pepper oil, salt & pepper.
I added a leftover chopped chicken thigh to a heaping helping and had a great cold lunch!
