Choosing Offsite Resort for Anniversary

We have always stayed onsite, and are trying to choose a resort to stay for our anniversary next year (3-4 nights). We aren't planning on going to the theme parks (except maybe EPCOT one day), but are planning on just relaxing by the pool and going to DS in the evenings. We are trying to make this a less expensive trip than when we bring the kids with us. Therefore, a deluxe resort is out, but we are spoiled by staying at YC, and want the nicest pool area we can get. Swan and Dolphin rates have gone up from what I remember them being, but we would love to have a balcony and be near BW. That being said, the Hilton Doubletree (w/patio) has decent rates, but I'm afraid we will be disappointed being next to the highway. The other resorts I was looking at were Hilton Bonnett Creek and CBR (neither having balconies, but we could sit outside room at CBR. We have stayed at CBR a few times but I don't know much about HBC. Any tips for a more romantic resort than family-friendly would be greatly appreciated.
 
I'm a convert and big fan, so I'm going to say Wyndham Bonnet Creek. Very nice pools, beautiful walk around the lake in the evening - with a few porch swings to just kick back with your sweetie, you'd have a balcony (many with fireworks views), and plenty of room to stretch out and sit like civilized people on couches and chairs rather than lounging on a second bed (one of my big pet peeves about regular hotel rooms - no place to just chill out and relax, except maybe a chair) Very close access to Disney Springs and the Boardwalk. Quick and easy Uber to either one if you don't want to drive and park. All for the price of a Value or Moderate.
 
The Hilton Bonnet Creek would be an excellent choice. We stayed there last December and loved the upscale room, lush grounds, level of service, and gorgeous pool area. You may also use the amenities at sister Waldorf Astoria next door. (Very nice!) It is quite close to Disney springs and I know Hilton offers a complimentary motor coach shuttle to the parks - not sure if it goes to Disney springs or not. It was definitely more of a "couples" vibe. I see Kristin recommended the Wyndham vacation ownership - we love WBC too but it definitely feels more family friendly to me... have heard the pitter patter of little feet and little voices in the hall or on surrounding balconies every stay there.

Make sure you check Swan/Dolphin and Hilton Bonnet Creek on Orbitz and/or Last Minute Travel Club (there are promos floating around on the web to make their membership free and my account still works a couple years later) as we got a really great rate on all three of these resorts through booking engines when the price was too high for us going direct.
 
Hilton Bonnet Creek or even the Waldorf Astoria for a little quieter yet luxurious vibe - if you stay at the Hilton I think you can use the pools at the Waldorf and vise versa.
