chocolate dipped strawberries ?

I have dipped strawberries in chocolate before and they weep(drip out juice) after they have been in the fridge for a few hours. What am I doing wrong? I want to make them for my MIL tomorrow but I do not what them dripping and looking less than appitizing. I always dry them very well could it be that the heat of the chocolate "cooks them"? Am I better to dip them at room temp or should the berries be chilled before I put them in the chocolate?
 
I've had some condensation on the outside of the chocolate shell but not the berries drying out or weeping. I use cold berries but not frozen and I let them sit in a cool place rather than putting them in the frig. Our local confectioner just puts them in his case-unchilled after they are made.
 
For a different and quick variation, we wash the berries. Lay them on a plate and drizzle microwaved dark chocolate over them! Quick, easy and very delicious!
 
Wash berries, let dry and warm abit.

Use a product called Dolci Futta in a small cardboard container. I find it next to the berries in the produce section. Melt the chocolate in the cardboard container in the microwave at half power stirring every 30 seconds until smooth.
Dip berries and place on wax paper or parchment paper. The chocolate will harden in just a few minutes.

Move berries to serving platter, cover with plastic wrap and DO NOT refridgerate.

This is best done an hour or two before serving.
 

I now MUST try this !!! (I thought one did those with friend in bathtub ? when rich and living in penthouse appartment?? hahaha..) well I will go find spanish berries now, choclate ?? i already have hahaha... do enjoy... and thanx i learned something new today .:)
 
re read my post...when I said warm abit...I meant to leave them out and bring them to room temp. sorry.

I made some yesterday. I took them out of the fridge, washed them, let them sit between two paper towels for a few minutes, then let them air dry for about two hours out on the counter. I then used the Bakers Chocolate dipping concoction that comes in the styrofoam container that you pop in the microwave. It is very thick and people were asking if I double-dipped them. My strawberries got rave reviews yesterday, if I don't say so myself!
 
I've read that you shouldn't wash the berries, just wipe them with a damp paper towel. I can't speak from experience, but I'd guess the water would get trapped in the berry and leak out after the chocolate is dipped?
