I am looking for a chicken, rice, brocolli and cheese casserole. The cafeteria at a bank that I worked at made it and it was so good. I think there must of been cream of chicken or cream of celery soup in it.
Anyone have the recipe?

I bought a pkg makings from the Schwans company and it was packed full of chicken....and the meal itself was delicious...but ...the drawback of these meals are ......sodium ...and fat content....but this was wayyyyyy to good.....hope you find it

I have this one - more of a "from scratch" recipe:

Chicken Broccoli Casserole

1 1/4 lb fresh (or 20oz frozen) broccoli, chopped & cooked
4 - 6 c cooked chicken, coarsely diced
6 Tbl butter or margarine
6 Tbl flour
2 tsp salt
1/4 tsp pepper
3 c milk
1/2 c mayonnaise
1 tsp lemon juice
1 c Cheddar cheese, grated
2 Tbl butter or margarine, melted
1/2 c bread crumbs

Grease a 9x13 baking dish. Make a layer of broccoli, then chicken. In a saucepan melt 6 Tbl butter; stir in flour, salt & pepper. Add milk gradually, stirring until it comes to a boil. Remove from heat.
Combine mayo & lemon juice with white sauce & pour over chicken/broccoli. Sprinkle with cheese. Combine 2 Tbl butter & bread crumbs; sprinkle over all. Bake at 350 for 25 - 30 min.

Or, there's this one using soup:

Chicken Divan

20oz frozen broccoli
4 c chicken, cooked & sliced
2 cans cream of chicken soup (can substitute 1 cream of celery)
1 c mayonnaise
1 tsp lemon juice
1/2 c sharp cheese, shredded
1 Tbl butter, melted
1/2 c bread crumbs

Defrost & drain broccoli; arrange in greased 13x9 pan. Place chicken on top. Combine soup, mayo & lemon juice. Pour over chicken. Layer cheese over all, then combine crumbs & butter; sprinkle over all. Bake at 350 for 25 - 30 min.
[NOTE: The original recipe called for 1/2 tsp curry powder, but I've never used that! A friend also adds 1/2 c parmesan over the bread crumbs.] Mmmmmmm

I have a recipe for a Broccoli and Cheese Whiz casserole. Maybe you can just add cooked chicken to it.

1 large bag frozen chopped broccoli
1 stick of margarine
1 can cream of mushroom soup
1 cup Minute Rice, uncooked
1 small jar of Cheese Whiz
2 Tbsp. chopped onion
Cook broccoli until barely tender. Melt margarine and combine with soup. Combine all ingredients and cook 45 minutes at 350 degrees.

Mmmm, these sounds so yummy! Thanks for posting, I am going to try one of these recipes this week!! :)

Here's an easy one that I like to make and hubby loves it.

2 bags cooked Success rice
3 chicken breasts (cooked and cubed) I sometimes use leftovers
Broccoli florets (cooked) I microwave them
shredded cheddar cheese (about 2 cups)
1 pkg. Pillsbury crescent rolls
1 can cream of chicken soup

In a 9" pie plate, place separated crescent rolls so that the large end is in the center of the plate and the "point" is hanging over the edge. Press the dough into the bottom of the pie plate so that it is covered. Mix the rice, chicken, soup and broccoli in a bowl and mound in the center of the pie plate on top of the dough. Bring the "points" of the crescent rolls over the top of the chicken mixture until they all meet in the middle and pinch it to keep them together. Bake at 375º until golden brown. Cool slightly and slice like a pie. Delicious!

This isn't exactly made from scratch, but I like to have the ingredients on hand to make a quick dinner when I need it.

I start by toasting a few slices of bread. You can skip that part if you don't like a bread topping on your casserole, but I like it. I usually spray both sides of the bread with olive oil and toast them in the oven. I do about 3 slices. When done, I cut them into cubes and let them sit out to get a little stale. If you think to do it about an hour or so ahead of time, that's even better.

Then I make a box of Uncle Bens Broccoli Cheese and Rice soup. I think you just have to add some milk and a little margarine. When done, I stir in about 1-2 cups of shredded chicken. (I always have baggies of shredded chicken in my freezer.) That makes it thick enough that it's not just like soup.

I pour the mixture into a greased 8x8 pan, then I top with shredded cheddar cheese and the croutons I made earlier. I bake at 350 until the cheese is bubbly, or until I hear DH open the garage door. :) It's a great recipe because you can leave it in the oven for a little while longer if you're not quite ready to serve.

I basically use the exact same recipe except I use cream of chicken soup, add 2-3 cubed, cooked chicken breasts and I use rice that is already cooked. This is DH's favorite meal.
