I've been looking for new recipes all summer and just found this board! Thanks to all who post and moderate! This is great!:bounce:

I wanted to share a recipe that we use when grilling chicken. (It's good in the winter baked in the oven, but nothing beats it on the grill!)

Rosemary Chicken

4 - 6 chicken breast halves
5 cloves garlic, minced
2 tsp fresh rosemary (1 tsp dry)
1 Tbl dijon mustard
1 Tbl lemon juice
2 Tbl olive oil
3/4 tsp salt
1/4 tsp pepper
1 tsp lemon rind (optional)
Mix ingredients. Coat chicken. Marinate 1/2 to 4 hours. Grill.

A couple of tips:
- The lemon juice starts to "cook" the chicken if left too long; however, the longer it is marinated, the better the flavor.
- We use fresh rosemary & I don't know how you measure teaspoons of the stuff. I just cut a sprig to place on each piece of chicken.
- I use minced garlic in a jar. It's supposed to be 1/2 tsp per clove, but I generally use 2 Tbl.
Brown mustard works just as well as dijon.
- I also use Minute Maid frozen lemon juice, instead of squeezing lemons.
- Left-overs are great thrown on salads.
