Chicken pieces? Got any good ideas?

I have a cut up chicken I would like to do something with. My grandmother is having surgery today (minor) and is staying with my mom and my aunt is in town as well. I thought I'd take them a dish to have for the weekend. Mom is lactose intolerant, so no milk or cheesy dishes.

So, I was thinking of either baking the chicken with some kind of sauce that they can reheat or maybe cooking the chicken and shredding it for soup? I have some veggies in my fridge I can use up. Zuchinni, squash, tomatoes and a bell pepper, no potates. Any ideas? I'm not feel creative today.
 
I think they usually recommend rice for surgey patients since it is easy on the system. Steamed Broccoli, Rice and cubed chicken....you could make like a sweet and sour sauce for the non-surgery relatives. I also make the diet coke and oriental veggies/chicken /rice very good too.

Diet-soda chicken
12 oz chicken (boneless/skinless)4-3oz for indv portions
1 c ketchup
12oz diet cola
1 bag frozen oriental mix veggies(could sub fresh)
2 c cooked rice
1tsp lite soy sauce

Saute chicken
whisk ketchup/soda/pour over chicken/coverand bring to a boil
lower heat/simmer 45min

Steam Veggies in microwave(4mins)
remove and add soy sauce/cook and other 4 minutes

cook rice per directions

can combine all ingredients or keep seperate on plate
 
A nice Chinese stirfry requires no milk or cheese. Just use a can of low sodium chicken broth for the sauce. Season with a little soy sauce & a touch of sugar. (More salt if necessary.) Then thicken with corn starch or flour. :)
