Hi! This is one of the dishes I've made so many times I don't need a recipe anymore. It comes out great every time.
4 boneless skinless chicken breasts
2 Tbl. margarine
1 very large or 2 small onions, diced
1/3 cup paprika (sweet or combo sweet and hot to taste)
1 1/2 cups water
3/4 cup sour cream
cooked noodles (preferably homeade)
1. Brown the chicken in the margarine over medium high heat.
2. Add onions (just push chicken to side of pan) and cook until translucent.
3. Sprinkle chicken with paprika and add water (pour in side of pan, don't rinse paprika off of chicken).
4. Reduce heat to low, cover and simmer 15 minutes.
5. Flip chicken breasts, recover and simmer for another 15 minutes.
6. In a large measuring cup or bowl, stir sour cream until it is smooth.
7. Slowly, one gravy ladle full at a time, add liquid from the cooked chicken to the sour cream. Stir liquid into cream fully after each ladle full is added. Continue doing this until most of liquid from pan in mixed into the sour cream. This is important as it prevents the hot liquid from curdling the sour cream. Curdled lumps of sour cream are sort of gross looking.
8. Add the sour cream mixture back to the pan. Heat should be on low.
9. Heat through until just warm, do not bring to a boil or the sour cream may curdle.
10. Serve over hot noodles.
