Chef's recommendations?

We will be going for a no-park trip during January using the DxDP. We will be doing a few signature restaurants. Has anyone ever asked the chef to just send out the best dinner they recommend? We like the look of everything on the menu so I don't think we could be disappointed and the surprise might be nice. Besides, they should certainly know what is the freshest and the specialties of the staff that evening. We would also be doing the wine pairings so we would go with their recommendations for drinks as well.
I'm just curious if anyone else has tried it. I would hope they would be pleased we asked for their opinion or would we just be the PITA people at table 10?
 
I think it's a great idea! We have done this with a server at Disney, and I have also asked omelette chefs at the buffets to make me their favorite omelette - it worked great at Boma, as he used a lot of the more exotic/african spices, and he seemed to enjoy it.
 
Excellent example. I would always choose the same three ingredients for an omelet and miss lots of interesting possibilities.

I'm guessing many of us spend a great deal of time looking over the menus and probably know what we are going to order before we get there. But I'm looking forward to having a surprise (of sorts) come my way.

Does anyone know if there are certain chefs who are given more leeway to do their own specialities rather than the same menu day after day? I know a few menus change with the seasons but I'm not sure which ones change the most.
