We've eaten at both several times. For lunch I would do Chefs and for dinner I would do Le Cellier. Both restaurants are noisy with tables practically on top of one another so choose based on the menu.
We're choosing Chefs for our Feb trip. We've eaten at Le C before and when comparing menus for our picky kids, it seems like they would be happier with the food at Chefs. And if Remy makes an appearance, that would be an added bonus.
I agree do both, but we always felt more cramped at Le Cellier (but well worth it for the mushroom filet) I guess it all depends where you are seated as to how crowded it seems around you.
Chefs is a bit cramped with not much room between the tables but we had dinner there in Sept and the food and the service were wonderful. We told the manager that the service was the best we'd had at any WDW restaurant.
Haven't tried LeC yet, maybe this year.
