I've never had lunch there, but if I had to guess I'd imagine that they will operate similarly to other WDW buffets that do normally serve lunch - that is to say, with more emphasis on things like salads/fruit and cold cuts, and fewer high-end proteins (steaks/roasts of beef, for example) than would normally be available for dinner. I'm sure the dessert bar will be in full array.
As for beverages, the non-alcoholic type (soda, tea, coffee) are generally always included with buffet meals at WDW.
I've heard it is pretty much the same as dinner but w/o the prime rib. I heard from someone who went to the lunch last year. I also heard that a CM told someone it would be more like a BBQ--but it was really more like their dinner.
