If you do have plans for the last day past 11, you should be able to park in the overflow area for a few hours. I don't know how long you can stay parked, but we've parked in the outside lot, and then done lunch in another area of WDW.
I just got an email that WDW is "cracking down" on people who don't leave by check out time. As busy as FW is I don't see how they would let you stay over since every site is groomed before the next unit can come in and park.
About a year ago when we were at FW we left for WL around 9:30 for breakfast on our last day. I thought we'd be back before 11:00 but weren't. I called the front desk and the girl said enjoy your breakfast and don't worry until 1:00. Very nice I thought.
As far as the overflow lot, I talked to a CM and she said midnight was when you need to be out.
