Character meals near closing time

Hi, I have been actively listening to the dis unplugged podcasts on the character dining options. They have been great! Very helpful.

We have free breakfast at our hotel so we want to try to eat a later brunch for character dining and skip lunch. We are looking at doing either Minnie and Friend's or Surf's Up around 10:30am. They close at 11am. Is this a bad decision? Will the characters and the food disappear after 11am? We want to make sure we see the characters and don't miss out on the experience. Please advise if anyone has experience with this situation.
