If you're looking for Mickey Mouse and "main" characters in traditional clothing, Chef Mickey is probably your best option. Mickey, Minnie, Donald, Goofy, and Pluto are there.
Cape May Cafe has Minnie, Daisy, Gooofy, and Donald. Beach attire costumes.
O'hanas has Mickey, Pluto, Lilo and Stitch. Hawaiian shirt style costumes.
Garden Grille in Epcot is Mickey, Pluto, Chip and Dale.
Hollywood and Vine is Disney Jr. characters like Handy Manny, some Little Einsteins people ( I think June and Leo??) and Jake.
Be Our Guest is not character dining, but you do get to see Beast afterwards and take a picture with him.
Those are the main ones that I can think of. I'm sure there's one I'm missing. Hope that helps.
ETA..Oh! Princesses are at Akershus in Epcot and Cinderella's Royal Table in MK.
Also 1900 Park Fare has Alice, Mary Poppins, The Mad Hatter, Tigger, Pooh, etc. They have different ones for Breakfast and Dinner so check the site cause I can't remember which is which.
Crystal Palace is usually Winnie the Pooh and friends.
