I managed to get ADR at Akershus for the Storybook lunch. It will be 4 adults, dd8 and dd1. We are going to be at epcot all day. We can all just wear whatever we are wearing, right? We don't have to be dressed nice? Our shorts and regular shirts are fine? What about dd8? She will like seeing the princesses, I am sure, but she is a little past the wearing the princess dress phase. Would she be like the only little girl not in a special outfit?

Akershus should be fine with whatever you're wearing. We wore park attire to Cinderella's Royal Table, and it was perfectly fine.
The only places that have dress codes are the Signature Dining locations at the resorts. I expect that they realize that enforcing additional dress codes anywhere inside the parks would be difficult and bad for business. The resorts are more doable, but only Victoria & Albert's has a strict dress code.

Just inform your daughter that many of the other girls will be dressed up, and ask her if she would like to participate. I doubt she would be only girl there that's not dressed up, but who knows.

If you do choose to dress your daughters up, remember that those dresses can be itchy and uncomfortable. It might be worth it to bring a change of clothes for them.

You can wear whatever you are wearing in the parks. Your DD won't be the only one not dressed up. There will be a lot of little Princesses, but not all the kids dress up. We have been twice. The first time DD wanted to dress up. The second time, she just wanted to wear a summer dress not a Princess costume and she was only 3 at the time. She had no regrets. I don't know how close your 1 year old will be to turning 2 by the time of the visit, but she is the one who might want the princess dress. My DD got a Cinderella dress before she turned 2, and she wore that thing every day for an entire year, until she could no longer squeeze herself into the ragged tattered thing. We had a rule that it was only worn at the house, not when we went out in public.

Yes you can wear whatever you want , we brought a bookbag which had my daughters costume, snow white which of course was the only princess not there lol but there were lots of girls in costumes . So if your daughter does not want to wear one that's totally fine her not wearing one but if u think she will change her mind I would bring it with you. We really enjoyed the dining experience I hope you do too

You need to check out the disboutique board. There are many girly princess ideas that aren't babyish. I've even seen people make princess things that are a little rock-n-rollish.

I'm thinking something like Snowwhite for older girls.
