Changing my itinerary due to home project, need suggestions!

Hi everyone

Due to a home project that we need to do this spring, (which means dipping into our vacation
money), we have a change of plans! Instead of doing WDW for 5 of our 8 day vacation, we are going to visit Epcot for 2 days, and do day trips to Tampa, Daytona and Cocoa Beach...We would also like to do Medieval Times.

I will post my new itinerary, but if you have any suggestions, please feel free to post them!

I am not totally disappointed, but now this means returning to WDW in 2003!!!!

My suggestion would be to not pay the $45 dinner prices at Medieval times and do an extra day at a WDW park
