changing ADR dates question

We found great airfare to Orlando for the week before our vacation is planned. I would really like to change the dates but am afraid that we will not get any of the restaurants that we wanted. Our original dates are Dec 17 thru 21st. With this airfare price we would be able to add another day to our stay! Is there any way that we can still get some good ADRs? The two that I am worried about are CRT and LeCellier.
