Celebrating 16th B-day in Orlando

I was wondering if anyone has any suggestions on how to celebrate a 16th birthday in Orlando without doing the disney thing? I am flying my sister and niece to FL (their first time on a plane and first timne outside of PA). My niece turns 16 while we're there. She is into music..plays piano, clarinet, violin. I thought about taking her to the luau at Sea World but read bad reviews about it. Any suggestions would be greatly appreciated. TIA
