What a great idea -- I just may make these instead of regular mashed potatoes for Christmas!
Cauliflower Cheese Mashed Potatoes
(serves 4)
1 pound redskin potatoes, quartered and boiled or steamed
1/2 pound cauliflower florets, cooked
3 tablespoons heavy cream
Dash allspice
4 ounces Jarlesburg cheese, coarsely shredded
Salt & freshly ground pepper to taste
Coarsely crush the warm potatoes and cauliflower with a fork and season with the cream and allspice. Add the cheese, salt and pepper to taste.
