This is why I made my celiac disease (1% of the US population) and type 1 diabetes (0.5% of the US population) analogy! I would never expect over 99% of the country to bend to my will. If someone called me “sir” when clearly I’m a “ma’am” I’d be like, “um ok“ but wouldn’t dwell on it

Literally nobody is dwelling on it. To use your own analogy, no, you don't expect the country to bend to your will, but Disney (and many other restaurants) now do offer alternate menus for folks with dietary restrictions, and that makes you feel good/seen/accommodated, right? And it doesn't harm me, someone with no health issues, to be asked at every meal if I have any dietary restrictions. Wouldn't you want all guests to feel good/welcome/accommodated if it doesn't harm you in any way?
