Gebrannte Mandeln
500 g Almonds, rub off skins with cloth if desired
500 g sugar, melted in thick pot until gold brown
1 tbl spoon warm water (add to sugar)
1 tsp butter add to pot
Let come to boil; add almonds and 1 tsp cinnamon
The next part is tricky - you need to let them start to get hot again, and just when the sugar crystallizes, remove from heat. (they will get shiny just before this stage)
Spread onto nonstick cookie sheet, let cool
I used to make these every year as gifts. they are a great memory from the Christmas markets in Germany. If you don't have success the first time, try again. Typically lack of success results in a more peanut-brittle type candy than the coated nuts
