Caribbean dinner recipes?

Fried ripe plantains...you can sweeten them if you don't have them ripe enough (skins need to pretty much be brown)...this is the easiest recipe with the most available oils...

And for a fun presentation, I like this one - I don't use the nuts or the mango, but just serving a fruit salad with honey lime dressing out of a pineapple is Caribbean enough even if you change all the rest...

And if you want really easy, there are great off-the-shelf Jamaican jerk marinades for chicken/pork. Just pour (and add some extra salt/pepper to the meat). I have one in my fridge, but I'd have to find it:)...
