I used the pocketfolds from Cards & Pockets (saphire metallic). I purchased the pocketfolders, mat, and envelopes & return envelopes from Cards & Pockets. I made the inserts myself from regular white card stock-- which was the tricky part. I'm sure if you are ordering all the pre-cut stuff from their website you won't have quite the fiasco I had measuring things, etc.
I used a color laser printer to print my wedding stationery on. There isn't "silver" ink-- it won't look metallic. But you can play around with the colors and find a light gray that might work.
I made my invitations and inserts with MS Word. I have the file if anyone ever needs it. I used 4x6 white card stock from Michael's for the invites and 8.5"x10" white cardstock for the inserts (those all had to be cut down and it was a bit of a pain).
Once you get your "sample" done, it's not difficult to print it all out. Putting them together isn't difficult, either, just time consuming. I only made about 20 invites and it took me an entire Friday night and Saturday morning to put them together once they were printed.
Here is what my invitations looked like:
